Happy Memorial Day Weekend! What a special holiday- time set aside to commemorate the men and women who have served our country in the Armed Forces. We certainly wouldn’t enjoy the freedoms we do today without them, and I’m grateful! Memorial Day means a long weekend, the unofficial start to summer, firing up the grill, and gathering with friends and family. Need a little inspiration for your holiday menu? Searching for options off of the grill? Make these delectable beef brisket sandwiches with spicy homemade bbq sauce! Or try the most popular recipe on The Usual Bliss: pulled pork carnitas tacos with spicy slaw. They would be great with pineapple salsa!
Need a crowd-pleasing side dish? One of my favorites is this charred corn and black bean salad. Instead of rice, try a fresh and herb-y barley-pea salad with feta cheese. A salad alternative and tasty appetizer: shrimp summer rolls!
Don’t forget dessert! Homemade ice cream is always a hit, and it’s rhubarb season- throw in some strawberries, too! This lemon-berry cake is fruity and tart and feeds a crowd. And speaking of tart, ‘tis the season for my secret recipe key lime pie with fresh berries. YUM!
